Classic Rabdi

Rabdi is patience transformed into a delectable dessert. We slowly simmer full-cream milk in wide, heavy pans for hours, continuously stirring and scraping the sides to fold the malai (cream) back into the milk. This process repeats until the milk thickens into a rich, creamy, subtly grainy sweetness that no shortcut can ever match.

Once gently reduced, it is sweetened to perfection and infused with a hint of cardamom, then chilled and layered with delicate slivers of pistachio and almond. The result is indulgently rich yet light, a timeless flavor cherished in Delhi’s mithai shops for generations.

Serve it perfectly chilled on its own, or paired with hot jalebi for a classic combination that speaks for itself.
